These twin gear juicers are of course the most costly of the commercial juicers, but they offer many more benefits. They are also the best at what they do. The food is pressed between two interlocking gears. Because of the high amount of pressure created by these stainless steel gears, triturating juicers produce more juice than any other juicer on the market. This pressure breaks apart the plant cell walls allowing for a high density of nutrition in the resulting juice. These juicing machines can homogenize to make nut butters and sorbet. Many also offer pasta attachments.

Both masticating juicer styles rotate much slower than the centrifugal juicer. This decreases the amount of foam in the juice. Foam causes the juice to oxidize much quicker. There is also less heat produced as a result of lower friction. Heat destroys key nutrients and vitamins that we want to preserve. The lower speed does require a little more patience. Masticating juicers can take more time to juice the same amount of produce as a centrifugal juicer, but they usually deliver a higher quantity of juice.

The goal of any commercial juicing machine is to provide an increased level of nutrition. It is important to remember that in order to receive the benefits of juicing, we have to make sure we use the machine. The style of juicer we choose for ourselves basically comes down to what works for us. Ease of use is also one of the most important qualities we can find in a juicer.
